Flat bread is the new Kale. And thank God for that! After being at a Pampered Chef party and tasting a delicious greek flat bread recipe, I was inspired to create a similar one of my own. And it turned out gooooood. I use Pillsbury pizza dough in this which was a stretch for me because usually I’m kind of a snob with ready-made stuff like that. But it’s pretty good! And my snobbery has been snubbed! Please remember that I never measure when I cook, so this is my best guess at measurements. So here it goes…
Mediterranean Flat Bread
1 package of Pillsbury pizza dough, 1 1/2 cup mozzarella (put aside 1/2 cup of this), 1 cup cooked and chopped chicken, 1 cup well-chopped fresh parsley (put aside 1/4 cup of this), 1/2 cup feta (put aside a little of this), 1 cup cut cherry tomatoes, 1/2 cup cut black olives, 3 chopped cloves of garlic, 1 tbsp lemon zest, 1 tbsp olive oil, balsamic vinegar reduction. (a yummy extra would be artichoke hearts!)
Make the pizza dough as instructed on the package. Then throw all the ingredients except the balsamic reduction and all the asides into a microwavable dish.
Make sure to mix everything together really well in the dish and then put in the microwave for 2 minutes.
When your dough comes out of the oven immediately sprinkle the mozzarella cheese you set aside over the top of it (it’s not supposed to be a lot). Allow it to melt. Then spread mixture over the bread. Cut into pieces. Then sprinkle the feta you put aside on top, as well as the left over parsley. Drizzle balsamic reduction over the whole thing. Serve warm.
