I find myself making these muffins all the time, because they are so great to have on hand. I admit that they aren’t the most healthy snack in the world, but you can feel good about the fact that your eating banana’s…right?
Banana Chip Muffins:
1 egg, 1/4 cup cooking oil, 1/4 cup milk, 1 cup mashed banana’s (or 3 medium banana’s), 1 3/4 cups flour, 1/2 cup sugar, 3 tsp baking powder, 1/2 tsp salt, 1/2 cup chocolate chips
Measure first 5 dry ingredients into large bowl. Mix thoroughly and make a well in the center. Beat egg until frothy. Mix in oil, milk and banana’s. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin tins (or muffin cups) 3/4 full.
Bake at 400 F (200 c) for 20-25 minutes.
