Easy Quesadilla’s…

It’s recipe time!

I thought I would post a recipe that I have been making forever. It is very easy and a family favorite.

Easy Quesadilla’s

1 tortilla per (adult) person (or more if you have a hungry family), cooked & chopped chicken (2 chicken breast for a family of four), salsa, ranch dressing, shredded cheese, olive oil

Cook your chicken however you want to (baked, fried, BBQ’d). Place your tortilla’s on a cooking sheet with parchment paper under it. Cover half of the tortilla with the chopped chicken. Drop about four or more dollops of salsa over the chicken, then drizzle ranch dressing over all of it. Cover all of it with your desired amount of shredded cheese. Fold over your tortilla and drizzle a little bit olive oil on top and spread it over the surface. Place the pan in the oven on broil (Hi) until the top is brown. Keep a close eye on the oven, because this doesn’t take long. Then turn the quesadilla over and spread olive oil on that side and put it back in the oven until browned.

This recipe is very messy, but so very good. I usually serve it with carrots and dip.
