BBQ Salmon Fettuccine…

I thought it was time to include some recipes in this blog. So I will start with a recipe I came up with that has become a family favorite. Now this is going to be difficult for me to write out because I usually just eyeball my portions…but I’ll give it a go. The recipe makes 3-4 portions. See below for pictures!

BBQ Salmon Fettuccine

Fettuccine noodles, salmon, 3/4 c. soya sauce, 1/2 c. brown sugar, 1/4 c. olive oil, 1 tsp ginger powder, 3 garlic cloves, 3 tomatoes, 1 zucchini, 1 onion, 4 garlic cloves, fresh rosemary, 2 tsp salt, red wine (cooking or regular), olive oil

First combine soya sauce, b. sugar, oil, ginger and garlic in a bowl and marinate the salmon for at least an hour or more. Then double wrap the salmon (with some of the marinade drizzled on top) in tin foil.  Cut a couple of slits in the bottom of the tomatoes and place them on tin foil. Surround the tomatoes with zucchini, onion, garlic and rosemary.  Then drizzle red wine and olive oil over mixture. Sprinkle salt and wrap mix. Start cooking the fettuccine. Place both tin foil mixtures on BBQ until both are cooked. Cut up tomatoes and mix all the veggies (including the juices) into the cooked fettuccine. Flake the salmon and add to the rest, including the juices. Then enjoy!
